In Android you can set DNS over TLS (DoT) system wide.

Maybe check the Firefox ESR version, is a more stable version of Firefox that have less updates (only security). So it's more unlikely that anything breaks.

Did you tried creating a new profile? browsing with no extensions and default settings can give you an idea of what is causing the performance issues.
