When I print a news story to .pdf using "Simplified" format (gets rid of extraneous material) the new story's publication date - present on the new source's webpage - does NOT appear in the .pdf.

The failure to include the publication date occurs across many news sources, e.g., Reuters, AP, BBC, Al-Jazeerah, Deutsche Welle, etc. All of these news sources can be accessed by anyone, who wishes to do so, e.g., www.reuters.com

Thus, the problem - the omission of the publication date - is unlikely to result from a specific news source's page coding. Rather, the problem likely is rooted in the coding for the "Simplified" format.

A news article's actual publication date is a critical item. The publication date may be weeks, months, or years before the date on which I print the article.
