Allow users to override accent color in themes

Please allow users to override the accent color in themes either by selecting a color directly or by honoring the user's accent color (if present in the OS). Right now, near as I can tell without learning how to develop a theme, it looks like the colors are all set by the theme itself and there's no way for the user to change any of them.

The designs already honor the device dark/light mode settings, so honoring the device accent color feels like a natural extension of that design philosophy.
