The redesigned Android menu page has several prominently listed shortcuts that I never use, and has hidden my most-used feature of "Open in app" behind an extra click and scroll in the "More" section.

I would like to be able to customize which 4 shortcut buttons are always displayed (instead of always History, Bookmarks, Downloads, Passwords), or choose which 4 top list options are always displayed outside of the More section (instead of always Bookmark, Find, Desktop site, Extensions).

If we can't have the option to go back to the old UI, this would be my next preference, for exactly the reasons cited by OP. I use "Open in app" a lot (but don't have it turned on by default, because there are a few services I use where I have the corresponding apps, but still need to use the website often). The button is now hidden behind "More" and a clunky animation, which slows down something that I could previously do quickly.

Completely agree, choice of the shortcuts there is reasonable, but absolutely not what everyone would choose to have there. It would be nice to be able to customize it similar to customizing the toolbar shortcut

Similar idea. I use the "star" button a lot, but it got moved into the menu. I'd much rather have it in the address bar and be able to move the "share" button to the menu. For the "star" button, it's even more annoying, because what I typically want to do it "if this isn't starred, star it" but now for the first part, instead of glancing at the address bar, I have to open the menu.
