Yes please! I know Thunderbird is great as an email client but honestly this is a very basic feature.

Correct. For Windows, this will be delivered via Bug 2044250 - Replace Windows "minimize to tray" with "close to tray", add start in tray.  Version 154 will ship toward end of August.

Good news for other OS, there is some work in progress.  But not possible at this time to predict when that will be available.
