Steps:
1. I need to change the Server Name. I edit the Server Name:
Thunderbird needs to restart to make the changes.
2. I need to change the User Name. I edit the User Name:
Thunderbird needs to restart to make the changes.
Why do I need to do this? This reminds me of Windows when each change requires a restart?
Why can I not make the changes on the fly as I used to do?

And is that a version released by the Thunderbird.net location or is it something from your Linux repository, or a flat pack? I have heard of these sorts of issues for some windows users who choose certain anti virus products to install. In those cases they come down to permissions. SO I suggest you might want to look at permissions on your system for the Mozilla updater (Which is what is supposed to update Thunderbird) but that only applies if it is a build from Thunderbird.net.

This version was updated via repository (Ubuntu). So, I would think that the permissions $HOME/.thunderbird would not be affected.
