It's just **bleep**ing annoying to have change for changes sake. Does altering the UI just enough to make things look annoyingly different make anyone's experience better? No. Does it make the software better? No. It's just annoying to have to re-orient yourself for no good reason.
The stupid gradient across the top is a prime example.; why is it there? It's distracting AF and does quite literally nothing to make the experience better.

To reverse most of the recent changes: URL bar -> about:config -> ENTER -> accept warning -> search nova -> double-click "browser.nova.enabled" to make it say "false" after
Long term: look into alternative browsers built from Firefox like Floorp, LibreFox or WaterFox
