This issue sometimes happens when Thunderbird’s theme or composition settings override system colours. Try the following steps:
Go to Settings → Composition → HTML Style, and uncheck “Use my default colours”.
Then go to Settings → General → Language & Appearance, and under Colours, select Use system colours and save.
If it still resets, switch to the Default theme under Add-ons → Themes, restart Thunderbird, and reapply your preferences.
This should keep your background white (or your system’s default) instead of orange when composing new emails.
