I've got Firefox open now with only one tab open, Google, and Task Manager reports around 500MB RAM use.

Remember that extensions require RAM, so if you have loads of them installed (in Firefox, go into the Menu, then click Extensions and Themes), then that will bump-up the RAM use. Disable or remove any you are no-longer using.

Firefox also has it's own Task Manager: go to Menu -> More tools -> Task Manager.
You can then click the "Memory" column to sort largest first.
Maybe that will help you see what is using the memory?
